Shortbread Chocolate Chip Butter Cookies

After two attempts at making chocolate chip butter cookies using premix in which the 2nd was a success, I have decided to take the plunge in baking cookies WITHOUT relying on premix. This recipe was adapted from Allrecipes.com. I didn't managed to take pictures of the ingredients and the process as it was a spur of the moment thing to bake it since my brother in law and his friend came by to have dinner at our house and I thought it'd be nice to have new guinea pigs to test on to bake them these cookies. So without further ado, here goes:

SHORTBREAD CHOCHOLATE CHIP BUTTER COOKIES

PREPARATION TIME: LESS THAN HALF AN HOUR

* About 5 minutes to mix & prepare the dough
* 17 minutes for baking process 

Ingredients / Tool Required:

* 220 g all-purpose flour (I used wheat flour)
* 2 g baking powder
* 2 g salt
* 225 g unsalted butter (melted and I used salted butter instead)
* 100 g white sugar
* 125 g semisweet chocolate chips
* A bowl to mix ingredients in
* Kitchen scale
* Metal cup to store melted butter
* Spatula
* Baking sheet & paper

What to Do?

* Preheat oven to 150℃.
*
Sift together the flour, baking powder and salt, set aside.
*
In a medium bowl, cream the butter and sugar together until fluffy.
*
Gradually stir in the dry ingredients, then stir in the chocolate chips.
*
Roll the dough into small balls and place on the baking sheets/tray, spaced slightly apart.
* Flatten each balls slightly.

BAKING PROCESS

* Set oven to 150℃ and bake for 15-20 minutes until light golden brown.
*
Remove from sheets to cool on racks.

"Yummy! Considering this is my 1st attempt at baking cookies without premix, this is really really good! Even taste better than the premix! Crisp, taste all are just nice!" (giving myself a pat on the back.. hehehe)

"You mean this is from scratch? Not using premix?! Wow, taste good! In fact, it tastes better than the premix!"

"Mmmm... taste very delicious! The sweetness and all are just nice! What's the recipe?"

"Very good, if you add in pistachio nuts in the next attempt will be delicious!"

Thanks for stopping by my blog today and for leaving such a genuine, heartfelt comment.  It truly means a lot.  It definitely is SO heartbreaking as a mom to watch our babies cry and not be able to figure out why!  I have 3 daughters and I know exactly what you mean.  My middle daughter had severe reflux and she cried incessantly for months before the doctors finally figured out what was wrong with her.  It was so hard to watch her be in pain but not know why or how to help her.

Hi Jenni!

Whenever I attempt to bake new stuff, I will look for the premix and once I'm comfortable with the recipe, then I will ditch the premix and start with the actual ingredients. I always feel guilty when I used premixes.. kinda like I'm taking the easy way to do things ;P

They are yummy considering I don't use premix at all! Wait up for my next post on shortbread shape cookies (pictures on FB). More yummy! Laughing

Btw, when you said your oven always failed your baking, what it means ar? It turns out bad or what?

I meant the cakes didn't raise or cook properly. It couldn't be recipes' fault as I followed exactly what was asked for. I'm thinking to rekindle my love for baking by getting an affordable oven.

Hmm... how about bake easier things like muffins or cookies first? These are pretty simple considering they don't use those pans and tins. Sometimes using the wrong pan sizes or the temperature setting could affect the baking too.

Which is why I started my baking with muffins and premixes. Keep trying and experimenting in order to get comfortable and accustomed to my oven settings. After tons of attempts in making premixes, I realised my oven temp is higher than normal conventional oven.

Nowadays, I always reduce by 10C and bake few minutes less compared to the actual recipe Smile Slow and steady, try and keep trying!

Thank you for your comment! Yes, these are delicious, and I attempted another batch of shortbread shapes cookies after this post (no premix too yipeee!) and they turns out real nice... so nice that I've been making them few more times already!

I do agree with you on not using premix cos we know what goes into them. For now, I'm no longer relying on premix for cookies. But as for muffins, oh well... I still have to use the premix as I'm trying to perfect my skills in baking them to perfection (getting close!)
