Hearty Banana Oat Flapjacks

~ Posted on Friday, February 3, 2012 at 9:19 AM ~

It has been months since I posted stuff related to baking or cooking. After my last recipe post on the Easy to Remember Pancakes, I browsed through the recipes on my iPad and came across this recipe which is quite similar, except you add oats into  it as well! Anyway, without further ado, here goes:

HEARTY BANANA OAT FLAPJACKS

PREPARATION TIME: LESS THAN 20 MINUTES

Prep Time: 10 minutes
Cook Time: 5 minutes

Ingredients:

* 2 large ripe bananas, peeled and sliced
* 1 tablespoon granulated sugar
* 1 cup all-purpose flour
* 1/2  cup Quaker® Oats (quick or old fashioned, uncooked)
  (I used Ben's organic instant baby oats)
* 1  tablespoon baking powder
* 1/4  teaspoon ground cinnamon
  (I omitted this)
* 1/4  teaspoon salt (optional) (I omitted this)
* 1  cup fat-free milk (I used a packet of full-cream UHT milk)
* 1  egg, lightly beaten
* 2  tablespoons vegetable oil
* Aunt Jemima® syrup, warmed
(I omitted this)
* Banana slices (optional)
* Coarsely chopped walnuts or pecans (optional)
(I omitted this)

What to Do?

* In medium bowl, combine banana slices and sugar; stir to coat slices with sugar. Set aside.
* In large bowl, combine flour, oats, baking powder, cinnamon and salt; mix well.
* In medium bowl, combine milk, egg and oil; blend well.
* Add to dry ingredients all at once; mix just until dry ingredients are moistened. (Do not overmix.)
* Heat griddle over medium-high heat (or preheat electric skillet or griddle to 375°F). Lightly grease griddle.
* For each pancake, pour scant 1/4 cup batter onto hot griddle.
* Top with four or five banana slices. Turn pancakes when tops are covered with bubbles and edges look cooked.
* Serve with warm syrup and, if desired, additional banana slices and nuts.

Product Review & Giveaway - FunBites

~ Posted on Wednesday, February 1, 2012 at 8:09 AM ~

I received an email from Bobbie Rhoads, the inventor of this awesome product asking whether I am interested in reviewing her product. Oh hey, any product that helps to ease my work in preparing food for the family is always welcome! Anyway long story short, here is my review of the FunBites™ set which was sent to me.

Choose your favorite FunBites™ pack in Cube It! or Luv It! Each pack includes it's own cutter with curved blades that quickly cuts food into small bites and a matching popper that instantly pops out the fun-shaped pieces so hands are clean, food is untouched.  Use on any kid-friendly food from pancakes, fish, cheese, and bread to waffles, watermelon and burgers! Start with a flat surface and let the magic begin!

I received both the Cube It! or Luv It! set for my giveaway. My review here will be based on the Cube It! set as I realised I've always been cutting the food Ben takes into cubes. My feedback as below:

* Appearance: I love the colors of the FunBites™ set. It is quite heavy (for me) but the size is just right.

* Functionality: It is very easy to use and I love the handling of the Cube It! set. I just need to remove the popper aside, placed the cutter on top of the food I want to cut into cubes, press downwards while holding the cutter handle at the sides for a few seconds. And once you removed the cutter, you just need to slot back the popper into the cutter and your food will pop out in cubes size now!

Anyway, enough talking, check out the pictures below for some of the occasions when I used FunBites™:

Ahhhhh... my favorite fruit, mangoes!!!

French toast!

Top picture: Cheesecake, Bottom picture: Broccoli pancakes!

Verdict: I love how it helps save my time in preparing my boy's food by cutting it to bite-sized pieces!
