Soy Sauce Chicken with Potatoes

For this post, I am sharing my next food recipe, a very cherished dish that I used to love eating! I remember back when my mum was still alive, she used to make this dish very often, and I can just eat plates (yes, I said plates!) of rice with the sauce and just plain potatoes! Crazy huh?! Hubby taught me how to make this dish a few weeks back but being the smart a$$ I always am, I did not write down the recipes and step by steps too! *smack head*

So, as a disclaimer, I take full responsibilities of the recipe here which I definitely can't give you exact measurements and proper steps to cook as well. No kidding! I just go by the live and let live motto and cook away!!!! (and hopefully nobody in the family had food poisoning after having this dish hehehehe) Without further ado, here goes my post on Soy Sauce Chicken with Potatoes:

Ingredients:

** Garlic - 1 clove chopped finely
* Ginger - few slices will do
* Potatoes - boiled and cubed earlier
* Oil for frying chicken - about 2 ~ 3 tbsp
* Vegetable broth - about 1 cup
* Soy sauce - about 5-6 tbsp
* Chicken meat - cut into bite sized
* Salt & pepper to taste
* Optional: You can put in Chinese rice wine as well, carrots sliced
Methods:
* Put in the oil, fry the ginger slices for a minute or two.
* Fry the garlic next until you smell nice garlic-ky smell from the frying pan. Be careful not to overfry them as it will give bitter taste then.
* Fry the potatoes and set aside.
 * Fry the chicken meat for until they turned golden brown in color.
* Pour in the vegetable broth and soy sauce mixture.
* Cover up the frying pan and let the dish simmer and cook for about 30 minutes.
* On and off, taste the sauce to check whether the taste is to your liking. Add in salt and pepper if needed.
* To make more sauce, add more vegetable broth and soy sauce mixture.


Outcome:

I get an A+++ for this dish! Woweeeee!! There's definitely room for improvements for this dish. I gotta experiment how to make it like how my mum cooked hers. Until then, A+++ is not bad huh?

Baby Room Review - Parkson, 1 Utama

I hope you enjoy reading my baby room review as much as I enjoy sneaking in my camera along with my baby and sheepishly taking pictures during the nursing session hehehehe....

MY FEEDBACK

Location: There is proper signage that will lead you to the baby room (the baby room I went to was located in the children's department - sorry, forgot which floor)

Facilities: There are a few nursing cubicles, each has a curtain to open and close from both outside and inside for some privacy though there is a hook inside you can sort of 'lock' the curtain to disallow people from pulling it open, dustbin, comfy sofa, a sink with mirror, baby diaper changing station and there is a comfy sofa outside the nursing cubicles as well. I didn't pay attention to the power outlet as being a breastfeeding mum who nursed directly, I never bother to look for all these power outlets :P

Comfort Level: The cubicle is OK, I am quite nervous with the curtain closing up the room I'm although I can hook it to stop people from outside from accidentally pulling open the curtain. The cubicle is spacious enough for me and 2 kiddos :)

Ask And You Shall Receive...

For today's post, I would like to share with you all an incident on how wonderful it is that our prayers were answered by God in the nick of time! We had our final family holiday for 2013 in Penang and were half way into our journey when one of the car's tyres punctured. I didn't even realised it happening (never experience it before and do not know what sort of sounds to look out for) until hubby slowed down his driving and wind down his window to listen to the screeching sound outside made by his front tyre.

Oh boy... I remembered how worried I was then. In the middle of the highway, not much space on the side lane for us to park and change tyre, it was about 12 noon, VERY HOT SUN and the thought of our kids getting cranky just add on to my worries then. Hubby made a quick call to his 2nd brother for his opinion - whether we should call the auto service to come and repair the tyre or is it OK for hubby to change the tyre himself. Hubby's family was in the auto repair line so he has the knowledge and skills to change the tyre of course, just that if possible he doesn't want to be changing the tyre in the hot sun with very minimal space in a busy highway lane.

His brother said he will call back with the auto service number and right after hubby hung up the phone, we saw a highway patrol jeep passing by RIGHT NEXT TO US. Okay, not exactly next to us as our car was actually in between 2 busy lanes. I wind down my window and waved at the patrol car and the driver initially gave us a thumbs up sign (probably signalling to us everything OK or something) and was about to continue to drive off and I quickly shouted we need help with our car.

Thank God they heard us and stopped their car. They told hubby to drive over our car to their side lane while they helped to change the tyre for us. It's just amazing how God heard our prayers and took care of our worries by sending these helpful patrol officers right on time to help us out.

Everything was fixed under half an hour while our kiddos and I remained inside the car. Thank God again they were calm and curious to what was happening outside and I took the opportunity to explain to our almost 5 years old boy what is happening, why the tyre needs to be changed, how God answers our prayers and so on.

Once the tyre was replaced, the patrol officers guided hubby to the nearest tyre shop so that we can get a replacement tyre (just in case this happens again as we continued on our journey). Thank God the tyre shop is open and we managed to get a new tyre for backup and continued on our journey then.
